El k\u00e9fir (conocidos como B\u00falgaros, yogur b\u00falgaro, leche kefirada o yogur de pajaritos en Chile) es un producto l\u00e1cteo parecido al yogur l\u00edquido, fermentado a trav\u00e9s de la acci\u00f3n de un conjunto de levaduras (hongos) y bacterias (lactobacilos).\u200b<\/strong><\/span> Tambi\u00e9n reciben este nombre los gr\u00e1nulos o n\u00f3dulos utilizados para su producci\u00f3n.<\/p>

Los gr\u00e1nulos o n\u00f3dulos de k\u00e9fir tienen un aspecto similar al de la coliflor pero son m\u00e1s blandos y gelatinosos; es una masa bi\u00f3tica simbi\u00f3tica que combina bacterias probi\u00f3ticas, levaduras, l\u00edpidos y prote\u00ednas, envuelta en una matriz polisac\u00e1rida, denominada kefiran. Los principales microorganismos que conforman este ecosistema microbiano presente en el k\u00e9fir son: la bacteria Lactobacillus acidophilus y la levadura (hongo unicelular) Kluyveromyces marxianus, aunque var\u00edan seg\u00fan las regiones y m\u00e9todos de cultivo.<\/strong><\/span><\/p>

Se cree que la palabra k\u00e9fir proviene del turco keif que significa agradable sensaci\u00f3n o sentirse bien, para referirse a la agradable sensaci\u00f3n experimentada cuando se ingiere, y que conlleva adem\u00e1s la connotaci\u00f3n de bendici\u00f3n a quien se regala.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t

Tambi\u00e9n resulta interesante decir que a principios del siglo XX, la Sociedad de M\u00e9dicos Rusos se interes\u00f3 en obtener la misteriosa fuente de esta bebida tan saludable. Pero dado que quienes pose\u00edan los granos no estaban dispuestos a compartirlos con ellos, tuvieron que recurrir al enga\u00f1o y robar el cultivo. En esa trama estuvo involucrada la joven rusa llamada Irina Sakharova y el pr\u00edncipe del Caucaso, Bek-Mirza. Ella trat\u00f3 de conseguir algunos n\u00f3dulos con el pr\u00edncipe, pero est\u00e9 se neg\u00f3. Una corte o tribunal del ZAR de la \u00e9poca y a modo de indemnizaci\u00f3n, orden\u00f3 al pr\u00edncipe que entregara algunos de sus valorados granos de K\u00e9fir. Fue Irina quien llev\u00f3 en 1908 los primero granos de K\u00e9fir a Mosc\u00fa y desde aquel d\u00eda el K\u00e9fir se ha convertido en una bebida muy popular. En 1973, cuando Irina ten\u00eda 85 a\u00f1os, obtuvo el reconocimiento oficial del Estado Sovi\u00e9tico por \u201chaber llevado el K\u00e9fir al Pueblo Ruso\u201d.<\/strong><\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t
